feta stuffed chicken breast

 



Ingredients:


2 boneless, skinless chicken breasts

1 cup fresh spinach leaves

1/4 cup crumbled feta cheese

1 clove garlic, minced

1 tablespoon olive oil

Salt and pepper to taste

Toothpicks or kitchen twine

Instructions:


Preheat your oven to 375°F (190°C).


Lay the chicken breasts flat on a cutting board. Use a sharp knife to make a horizontal slit in each breast to create a pocket for the stuffing.


In a small pan, heat the olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.


Add the fresh spinach to the pan and cook until wilted, about 2-3 minutes. Remove from heat.


Stuff each chicken breast with half of the sautéed spinach and sprinkle with feta cheese. Use toothpicks or kitchen twine to secure the openings, so the stuffing doesn't fall out.


Season the stuffed chicken breasts with salt and pepper.


Place the stuffed chicken breasts in a baking dish and bake in the preheated oven for about 25-30 minutes or until the chicken is cooked through (reaches an internal temperature of 165°F or 74°C).


Let the chicken rest for a few minutes before removing the toothpicks or twine.


Serve with your favorite side dishes, like a salad or roasted vegetables.
